Methods:

In a large bowl, beat together ½ cup sugar and egg yolks until light and frothy.

Add the cornstarch and milk. Mix well.

At the end, add the cinnamon stick and lemon juice.

Pour the mixture into a pan and cook over medium heat, stirring continuously until it starts to thicken.

Remove from the heat, discard the cinnamon stick and divide among ramekins.

Let cool completely, then put itin the fridge to cool before serving.

Sprinkle the remaining sugar over each ramekin and caramelize using a blowtorch.
